When I learned that Yuki no Bijin also brews sake with No. 6 yeast, I bought it.
The aroma, acidity, and umami are typical of No. 6 yeast.
It is indeed delicious!
It's super dry, so it's clean and sharp, but it's also very light and refreshing.
The alcohol content is also high, so I drank about 1/3 of the bottle and called it a day.
I will enjoy it again tomorrow.
