3.Yamamoto's Turquoise Blue. The palate is clean, fresh and easy to drink, with a good flavor and a dry aftertaste. The aftertaste is spicy, but because it's so clean, it feels a little thin. It needs a little more umami and acidity. Junmai Ginjo, Kaizen Shinko 55%, about 3,000 yen, Nakazawa Sake Shop in Yachiyo. (They only had one bottle).
