HYOGO SAKE EXPO 2023" 8 Tsubozaka Sake Brewing Company "Yukihikosan", Himeji City, Hyogo Prefecture Founded in 1629. Yoshiaki Tsubosaka, the 16th generation head of the company, is the current owner. He graduated from Tokyo University of Agriculture with a degree in brewing. The brewery uses subterranean water from the Mt. Yukihiko mountain range and naturally ferments its sake without any temperature control equipment. Junmai Yukihikosan. Impressive for its robust rice flavor. It is said to go well with salty food. Junmai Ginjyo Yukihikoyama Unfiltered Unrefined Sake Very rich and delicious. It is said to go well with hamburgers with tomato sauce. Daiginjo Yukihikoyama A little expensive, but not impressive because it is too refreshing. Junmai Ginjo Yukihikoyama Yume Nadeshiko The floral yeast aroma reminds one of floral yeast. The taste is also fruity and sweet. The brewery staff talked a lot about pairing and dishes that go well with sake, and it was interesting to hear about sake and wine and palate flavoring. He told me that they had used other types of flower yeast, but this was the only one they could sell. He said it was because the aroma and taste were not flowery enough.
