This sake is brewed with Kochi yeast CEL-24, which produces a very gorgeous aroma, like ripe pineapple or muskmelon. It is brewed gorgeously while retaining just the right amount of sweetness. It is sweet and sour and fresh, with a full-bodied sweetness and a refreshing acidity. The lingering aroma and lingering aftertaste are also gorgeous. To take full advantage of this flavor, this sake is sold as a year-round unpasteurized sake without being heated.
