This sake has two types of yeast: Tsukishita-bijin and strawberry.
Tsukishita-bijin yeast "produces a gorgeous but not too assertive aroma and a crisp, tight acidity.
Strawberry flower yeast "has a sweet, glossy aroma and a fresh, crisp taste.
These are the characteristics of strawberry yeast.
The aroma is gentle and refreshing acidity.
The taste is gently sweet and softly delicious. The aftertaste is clean. It is a clear and beautiful sake. It has sweetness, but it is not as sweet as expected. I expected some sourness, but there is almost none.
However, as it warmed up, the umami and acidity opened up. Totally different from earlier! The umami and acidity came out clearly, and finally the umami bitterness. Interesting!
Personally, however, I prefer the first snow-cold one.
If I were to compare it to Ghibli, I would say it is like Anna, the main character in "Marnie of the Memories". I thought she would be quiet, but she is surprisingly full of flavor and bitterness.
