I stopped by a liquor store and found last year's Tenmei. I was told that the label was stained and it was unsold. I was so excited to see that my favorite sake had been left on the shelf for a year that I immediately bought it. Pouring it into a glass, I was surprised to find a fresh citrus aroma with a hint of nigorigo. In the mouth, juicy citrus acidity mingles with lactic acidity. The mouthfeel is gentle, but the aftertaste is rather dry with an herbal bitterness. It was a very tasty sake with a gentle and clean taste that did not seem to have a rice polishing ratio of 88%.
