The brewery itself was selling them at the Satomi Scarecrow Festival last month, so I bought one. Chiyo on the label means Chiyonishiki. It is a local rice used to make sake. The unique flavor of Hinodeshizuru, which is immediately apparent after drinking, is cloth-like. Aged to a good degree of maturity, it is full of flavor. Evening sake with a calm and mature charm.
