Takayuu Junmai Ginjo AKE Mahi Nigori
It is very cloudy, but it is very smooth and tasty. I told the brewer that I couldn't drink it at the Takashimaya event, and that I could drink it over a year later, but I had already drunk it 😅.
But when I told him about it, he poured me a variety of different kinds, asking me to try them all 😁.
Takayuu Junmai Ginjo Ryo
It is brewed with Mizunara lacansea yeast. This yeast seems to produce a lot of lactic acid, so it has a little bit of a peculiar taste at first. It is too refreshing for a summer sake and not my favorite.
Takayuu Junmai Nigori
I thought it would be creamy with a hint of nigori, but it was too refreshing and not to my taste. It may be suitable for warming up.
Takayuu Junmai Ginjo Strong
I thought it would be creamy, but it was too light and not enough umami for my taste.
Junmai Ginjo Kizusai Sparkling
It's dry and shwashy. It is not too sweet and tastes like champagne. The alcohol content is 14%.
For a Tottori sake, it was all too refreshing. He said he was aiming for a sake that can be served both hot and cold.
