This will be the first time I've had Flax Cat Sparkling without sparkling, although I've had it twice.

Contrary to its image and rough impression, it is actually not sweet at all. It does not have a great umami flavor, but it is still a light sake that is quite tasty.
Sake like this is perfect for drinking on its own, but this is also perfect for drinking with a meal! This is because it is not at all sweeter than it seems.
It has a unique and complex aroma, a fruity and distinctive acidity, and no bitterness, which is very typical of Shinmasa.
In the past, this type of sake has had the image of being a slightly strange or low-alcohol sake, but this season's Flax Cat is a modern, easy-to-drink, pop-style sake with a wine-like flavor that makes it very tasty.
The night I was impressed by the ever-evolving Shinsei.
To be honest, I don't think of Shinsei as anything special, even though I drink a lot of it, but this is amazing! It tastes great!
