Ganki is a sake brewery in Yamaguchi Prefecture. I tried to find it on the Internet, but it was always sold out.
I had given up on it, but then a beautiful light blue bottle appeared in a certain store, just like an oasis appearing out of the desert.

Opening time: about 15 minutes (Terada Honke's "Musuhi" took 30 minutes, so it was easier this time)
Aroma: Round, soft and sweet.
Mouthfeel: Medium-fine bubbles with a gentle sweetness in harmony.
After that change: the last taste tightens up with a little bitterness.
Impression: It was a perfect match for creamy sake-kasu and white miso nabe.
We are grateful to have encountered a refined sake that does not bring its presence to the forefront, but rather accompanies the dish and brings out the deliciousness of the ingredients (sweetness of vegetables). Ganki is not easy to obtain, but I would like to build a relationship of trust with the owner and challenge other lines of Ganki.
