Nitoto used to have a very good Junmai Ginjo from Omachi. When I found Aizan this time, I bought it immediately. It had a gorgeous fruity aroma with grape and muscat-like acidity and sweetness, and I also detected a slightly yogurt-like fermentation, a woody aroma, and a complex aroma with a touch of alcohol. The taste was a delicious sake with a strong overall flavor of sweetness, elegant acidity, and umami. It was a treat!
