3. You can feel the strength of the acidity on the palate. It does not have the strong umami that is typical of sake, but while it is dry and refreshing, it has just the right amount of umami. It has a good balance of light acidity and umami. Fast brewing, light nigori nama sake, junmai, about 1600 yen, Otsuka Sake Brewery in Honmachi.
