Tenju Shuzo in Akita Prefecture.
This is a very special sake made with 100% Miyamanishiki rice grown by contract and brewed with ND-4 (Nadesico), a flower yeast from the University of Agriculture. It is a limited edition sake for this season.
Slightly colored and thickened in appearance.
The aroma is gorgeous. Appropriate for a daiginjo, but it doesn't seem to be a pure ginjo. But it doesn't seem to have the aroma of a pure ginjo-shu. There is a slight wildness to it.
The taste is complex. Sourness on the tip of the tongue, sweetness across the tongue, and bitterness on the side of the tongue, all at the same time. It's a bit of a drag, and it's not very pleasant.
