Rice used is Shonai-grown Kame-no-o It has a characteristic sourness. It is a type that I have never tasted before, and it is a little unpleasant. I can't find the right word to describe it, but it's like a drug. Is this part of the aging process? I wonder if it would be good if I heated it up.
