Junmai sake with 65% polished rice
The sake brewery was established in Higashikawa-cho, Kamikawa-gun, Hokkaido, as a sake brewery of the "public and private sector" type, which is rare in Japan. There is no "water supply" here, and when you turn on the tap, the natural water from the melting snow stored in the wilderness flows out sparingly. The brewing of this sake was entrusted to a long-established brewery in Nakatsugawa City, Gifu Prefecture, which was one of the first to see the great potential of sake rice grown in Hokkaido, and has a 143-year history of brewing sake called "Michizakura".
When poured into a glass, there is a gentle, slight ginjo aroma. The first impression when you drink it is that it is a mild and well-balanced junmai-shu with no miscellaneous flavors, while the umami, sweetness, bitterness, and acidity are all moderately assertive. The use of Hokkaido rice, Nanatsuboshi, is also highly rated!
