This sake is a gift from Hokkaido. The meaning of "Kaitakushi" comes from the fact that this sake is made from the drops of rice that our ancestors cultivated in the uncultivated land of Hokkaido and grew there. It is a dry speck, which is not usually drunk. The smell after opening the bottle is that of a robust sake. It is quite dry, with a sake strength of +8, and tastes slightly like melon and the sweetness of amazake. It is a relatively refreshing type of sake. It is a sake that can be paired with a wide range of foods. It is good at room temperature, but it is also good hot or cold. Sashimi goes well with it, but it might also go well with simmered dishes. It does not match my personal taste for rich sweet sake, but it is certainly a good sake.
