This is a brewery run by young brothers with the philosophy of "natural and careful brewing with all your heart. About 16 years ago, they started by brewing only one tank of sake to find the taste they wanted. The reason for this was that they were impressed by "Tobiroki", and since then they have been aiming to "make sake that can change the image of sake".
In order to improve the level of "all" sake, not just the sake for the awards ceremony, they keep brushing up the details of their work.
♢This junmai-shu won the Grand Prix in the junmai-shu category of SAKE COMPETITION 2014, the world's only competition in which only sake competes.
