Rice Rice polishing ratio 65 Alcohol content 17 Almond aroma? Is this what matured sake is like? Interesting problem brew...first day was bad, but the second day was not bad at all? Will it grow more? Maybe it's the type of sake that tastes better when the corners are removed. The spikes are turning into a delicious taste. Interesting...but still a problem. I gave it a score of 55 on the first day and 67 on the second day.
