Lots of surprising dairy notes on the nose: whipped cream, can cheese, sour cream, with underlying fresh nuts, green banana and apple. Not your typical daiginjo nose, but not at all unpleasant.
Super light and airy on the palate, like thick water. Aerating the sake in the mouth reveals the subtle fruit notes of apple and pear, with some delicate chestnut too. A crisp astringency and acid come through midway to tighten up the palate, and leave a soft, but lingering finish.
