Yamadanishiki is used, 70% polished [Yamahai Motoshibori]. Motoshibori is the first stage of sake brewing, the precious "moto," in which the yeast that promotes alcoholic fermentation, called sake mother, is cultivated.
Because this motoshibori is squeezed from the sake mother, it has a low alcohol content and high acidity. It has a different taste from the sake we usually drink. It may be easier to imagine it as a medium sweet white wine from the Loire region of France. Although highly acidic, it has a fruity flavor that gives it a pleasant aftertaste, and its low alcohol content makes it very easy to drink.
