Shinmasa's sake has a gentle taste with umami and acidity, and is always delicious and maintains my best sake brewing experience. Maybe it was because I saw the name "Sansho - Earth," but it somehow had a calming taste, and I found the Shinmasa I've had in the past to be less glamorous. Delicious.
