Last year's hiyaoroshi was aged for a year.
Yamada Nishiki, 60% polishing ratio.
It tastes like a 4-5 year old plum wine with very little sugar, or a mirin. It has a thick texture. In the mouth, the aroma of cocoa beans after ripening and coffee before roasting. After an instant, it snaps off quickly, leaving only a faint honey-like aftertaste.
It would go well with banana, red bean paste, chocolate, and smoked snacks.
