I was looking for a Mansaku Hiyayogoshi, thinking of going for a sweet sake after a long time, and this was recommended to me and I bought it! It seems they use all Sanke Nishiki sake rice! I wonder if it's popular among breweries in Nagano. I wanted to taste the sweetness that opens up as the temperature changes, so I served it cold. When opening the mouth, there is a faint scent of ginjo! When you drink it, the sweetness is not too assertive and surprisingly refreshing, probably due to the fact that it was chilled so thoroughly. The mouthfeel is gentle, with a slight sweetness in the aftertaste. When tasted on the root of the tongue, it has a slight alkalinity and a slight bitterness. When the temperature rises, the sweetness increases as expected and changes to a soft and gentle sweetness. But I personally prefer Mansaku. (Postscript) When it is warmed up further, the sweetness changes to a very refined sweetness. But I still prefer the Manzaku.
