Kome rice: Yamadanishiki produced in Shiga Prefecture

We have had many Sho Shiki, but this one is a low-alcohol, easy-going type that comes in quickly. It has a perfect balance of umami, slightly sweet and slightly bitter, which is typical of Sho Shiki. It may lack interest because of its mildness, but that is why I think it is a good sake for everyone. ☺️
