Local limited edition sake by Nakayuu, known for Tenjo Yumegen
The Hibuse no Toramai is a festival held in the Nakashinden area of Kami where the brewery is located. The area was hit by an unprecedentedly large fire caused by a strong "Yarai Oroshi" wind blowing down from the Ou Mountains.
Water flows when it is wet, fire when it is dry.
Clouds follow dragons, winds follow tigers.
Based on this passage from the I Ching, the Tiger Dance is an attempt to quell the winds with the help of the tiger.
Now, I have not had a chance to get it because it is a Bali local only product, but let's see how good it is.
The aroma is quite fruity.
The mouthfeel is based on a clean dry taste, but you can also taste the sweetness and umami of the rice. The sourness and bitterness from the umami come in a jolt, and the taste is crisp and sharp. The fact that the sake goes down so smoothly is probably due to the good salinity of the sake. It is delicious!
