Eiko-Fuji's first red yeast
Sake strength -64 and acidity 10.5
The numbers may make it look sweet, but sake has a high acidity level of 4 or 5, and even wine usually has an acidity level of 8 or less, so I expect it to actually be sour.
The aroma is slightly sour, like that of tomatoes.
The taste is quite sour as expected.
The sweetness is also quite good, but it is more sour than sweet and sour.
It tastes like orange or lemon juice with a little sake flavor added.
I like dry and sour red wine, so I think this is good, but if you don't like sourness, it might be a little too sour for you.
It has the highest acidity of any sake I know, and it's not really a sake, but it's an interesting sake that challenges the limits of sour sake, so you should definitely try it if you're interested.
