As a Shizuoka sake and a ginjo-nama sake, I wondered which way it would swing, but it was still a Shizuoka sake.
It definitely has a raw feel, and the ginjo aroma comes through, but it's not showy and quickly settles down, making it easy to pair with food.
However, as someone who does not seek ginjo aroma in Shizuoka sake, I would probably enjoy junmai better.
Nevertheless, it is still very tasty, especially after the recent string of fancy sakes like Nozomu and Morishima.
However, it is still more limited in its application than the mild umaguchi sake I usually drink.
However, I think it is too much of a problem.
