All of them are delicious, but this is a very special sake from Kangiku. It is brewed only once a year and is the highest spec sake of Kangiku. The rice is polished to an ultra-high 29%.
The aroma is very gentle, with a hint of pear. It is very elegant.
The mouthfeel is refreshing and slightly carbonated. There is a slight sweet, sour and bitter taste in the middle. The slight bitterness is a nice accent to the pear fruity sweetness and acidity.
The sweetness is the center of the taste, and it spreads out, followed by a pleasant astringent taste in the latter half. Thanks to the sweet and astringent floral notes and aftertaste, it seems to go well with meals. It is delicious.
If I were to use a Ghibli analogy, it would be Gigliola from "Red Pig". Fio's extremely beautiful sister. She is a very glamorous beauty, and she seems to know it. She is a bit more mature and calm than Fio. However, she is still a cheerful Italian girl. In the scene where Fio departs, she happily hands Fio the parts for the conversion, and it's cute how she waves her hands off in excitement.
