I was looking forward to drinking this one. The label reads "Don't get stuck in the past, don't get stuck in the future, just live in the present to the fullest" by the winemaker, Mr. Tadakatsu Onishi. Aiyama" is Hyogo Prefecture's preferred rice for sake brewing. Aiyama is said to be the softest and most soluble of all sake rice varieties. This makes the finished product sweet and elegant. It also has a strawberry-like flavor, acidity, and umami, making it a sturdy and delicious sake. Sip it carefully and savor it while thinking about the message on the label.
