Miyamanishiki No.6 yeast and low temperature fermentation makes such a difference... sake is interesting ^_^✨.
The aroma is mild and not that high, but when you put it in your mouth, there is no miscellaneous taste and it goes in clear😌 The aftertaste is quite sharp with characteristic acidity and some bitterness that seems to come from Miyamanishiki✨.
The first time I drank Shinsei was in 2017by or so with Lapidus and I was quite shocked at the time, but I dare say though, honestly, the colors these days are not enough for me personally 😂(sorry Shinsei fans, I dare you to like it too 😂).
I get the impression it's a bit too neatly put together, maybe not surprising in a good way😅.
I'm posting this with respect and anticipation for Yusuke Sato, who says he breaks it down and challenges himself every year.
