3 -> ★4. dewy leaf wind from the wind forest, picked in the middle of the day. On the first day, the mouthfeel is carbonated, with a sweet and acidic flavor that is 80% polished, and gorgeous. On the second day, it is fresh, but the corners have been removed, and the sweetness, umami, acidity, and bitterness are all well balanced, making it quite delicious. Junmai sake, 80%, unfiltered, unpasteurized, about 1800 yen, Otsuka Sake Shop in Honmachi.
