I took a tour of the brewery early last fall. I was able to learn a lot of things about sake brewing that I didn't know before. I enjoyed listening to them very much. Tasting the sake I was surprised at the tasting! I tasted one of them! It is a sake made from ancient rice. It has a distinctive acidity. Red to pink color because it is brewed with ancient rice I bought it to drink at New Year's. When I opened the bottle, I saw the label. The word "Sparkling" is written on the label! I didn't notice it! I carefully opened the bottle. A whirrrrrrrrrrrrrrrrrrrrrrrr! The bubbles are about to spurt out. Somehow, I managed to pour it into the glass without spilling.
