Yokoyama Goju Junmai Daiginjo Aizan Unfiltered Unrefined Nama Sake is apparently a special sake produced by the Shigeke Shuzo brewery on Iki Island, Nagasaki Prefecture. It is brewed using groundwater from Iki Island and has a fresh, juicy flavor. It has a good balance of sweetness, umami, acidity, and bitterness, and a fruity flavor.
Although sweet, it has a sharp impression, and the slight bitterness seems to tighten the overall flavor.
It is a good match for any dish, whether Japanese or Western.
I was lured to purchase this sake by the label that read "Next Challenge Sake" made by Shigeke Shuzo over a period of five years, taking advantage of the nature and traditions of Iki Island. This is my first sake from Nagasaki Prefecture. A bottle full of charm, this is delicious😋.
