I got a sub-zero stored Daiginjo from Kamito, the number one of the year so far!
When you open your mouth, it has a very nice ginjo aroma, though not very assertive!
When you drink it, you will notice a refined and crisp dry taste unlike that of the raw sake!
But it is not harsh, the mouthfeel is still gentle and the aftertaste is clean.
When tasted on the tongue, it has a slightly bitter aftertaste with only a hint of alkali.
I prefer the sweetness of the raw sake, but this is the dryness that is advertised, and I felt that it is the true form of the sake.
I liked this one a lot too!
