Since I am back from out of town today, I will enjoy it with the snacks I have on hand. I am looking forward to seeing how well it goes with the stewed beef tendon that I have left over for later.
This is the first time I have tasted Bodaiyuan sake. I feel sweetness and bitterness, but the sweetness seems to prevail slightly. It is low-alcoholic but also powerful. The beef stewed in red miso paste was well received. The bitterness is accentuated and seems to be a good palate freshener.
