寿梨庵
This is a sake from a brewery in Fuchu that has been revived after 38 years ✨.
When you open the bottle, the aroma of slightly sweet brown sugar and caramel rises up. There is also a banana aroma 🍌.
The sweetness is light and the acidity stands out 😮.
Finishes with a sharp, subtle astringency and bitterness.
I can feel many elements, but they seem to be a bit inconsistent...
It has a mixture of freshness and mature taste 🤔.
I will try again in two days 🤲.
The acidity is the same, but the flavors are more cohesive: ⤴️
The bitterness has increased and tightened up, and it has a clicky, jungin-like feel to it 😋.
