Kotyaman
Highly acidic sake made with white malted rice. The acidity is not as strong as I thought it would be, more like a sweet and sour white wine 🍷.
It's low in alcohol and light on the palate, so it's easy to drink, but it's not enough on its own, so it might be good as a food wine ☺️.
I'd like to try Spark next time!
