This is the first time I have heard of this sake rice.
The aroma is quite grain-like, with even a hint of savory flavor.
But there is also a lactic acidity like yogurt in the back, which is somewhat strange.
The mouthfeel is super smooth.
It has an acidity like that of Yamahai, and a sense of rich maturity.
But the body itself is not that heavy, and it disappears with a strong bitterness and alcohol.
Is this a characteristic of the rice?
I was a bit puzzled by the taste, which was not what I expected from Ni-Rabbit.
But it is certainly delicious.
It would also look good at room temperature or warmed.

I looked it up and found out that this sake rice is used only by Nitoshi!
What a precious rice!
