Aroma
Melon, pineapple, peach, apple.
Beyond the fruit, there is a sense of alcohol.
As it approaches room temperature, you can taste the flavor and sweetness of the rice.
Very fruity and juicy ginjo aroma.
[Mouthfeel
Sweet on the palate.
The sweetness clings to the tongue with a smooth texture.
It is sweet like rice and sweet like a sweet potato.
Peach, pineapple, lactobacillus drink, and apple sweetness.
The aroma itself is very fruity, but the sweetness and umami of the rice stand out on the palate.
Next to the sweetness is a slight sourness and bitterness.
However, this sourness and bitterness are not overpowering, and they are quickly cleared up when the sake is swallowed.
The aftertaste is dominated by the sweetness and umami of the rice in the mouth and nostrils.
And this lingering taste is also gradually cleared up...it is delicious.
Summary
A sweet and delicious sake.
The slight sourness and bitterness accentuates the sweet-umami on the palate and the sweet-umami aftertaste.
The taste and aroma are quite different from the "Kudo Ue Sake Mirai" that we checked in the past, but they both complement the quality of "Sake Mirai" very well and are delicious.
Personally, I would still recommend the Jr. series.
