Hmmm.
There is no rice flavor anymore. It tastes like a light alcoholic lemon soft drink.
When you drink it calmly, the acidity gives it a wine yeast-like taste. It is more pleasant to the palate when it is served very cold.
I think there may be a problem with brewing in France, but Japanese rice tastes great. Sake is made from the taste of Japanese rice. If it is said that this taste is the perfection of sake, that is the end of the story.
I wonder if Mr. Imai, the toji (master brewer), came from Shinsei and Abe breweries, which is why the taste is in this direction. I love the taste of my parents' brewery, Sei Shuzo.
