Junmai Hiyaoroshi is a pure sake brewed only with out-of-specification Yamada-Nishiki rice that has not been graded among the Yamada-Nishiki rice grown under contract in Tlatan Village (which is classified as ordinary sake under the Sake Tax Law). This is the quintessential sake of Tlatan Village, as it is made from Yamada-Nishiki (non-standard rice), which the villagers of Tlatan Village, under the slogan "takaranai tanuki no hanegyaku," have been brewing with the rice that they have been brewing with. It is a sake worth drinking.
It is a must-try sake.
Junmai Hiyoroshi is naturally delicious, but Tolatan is not bad! The price is about 270 yen less for a four-pack.
I'm happy to taste both the great and honorable Junmai hiyaoroshi and the slightly acidic and bitter character of the Tolatan hiyaoroshi ✨️.
My preference is still the junmai hiyayoroshi, but that's just a matter of comparing them....
