Nirugame is a sake made from rice that has not been polished very much.
It is said that rice used for sake usually needs to be polished down to about 70% to make a good sake (e.g., less than 50% for daiginjo). However, the rice used for this sake is about the same as that used for food, with a milling ratio of 90%. Moreover, it is brewed using the same method as in the Edo period (Edo period, 1603-1867), with a sake yeast yeast and no additives, so the rich natural flavors can be fully appreciated. It is a sake with a deep bosom, so please enjoy it at any temperature you like.
