This may be the quintessence of Konishi Sake Brewery.
A sweet sake with little acidity and a strong bitter taste.
It is not the latest trend, but it gives the impression of Itami's sake.
I like it as it is, but if you eat it with cheese, as the name suggests, the cheese and the sake are mysteriously sucked into your throat together, giving it a nice aftertaste.
By the way, it was a perfect match with Nara-zuke (pickles) as well.
