BacchusNYHere is a novel bottle to accompany you this evening. It is a Snow Goddess, so expectations are high. When the bottle is opened, it has a slightly ripe melon-like aroma. In the mouth, a firm sweetness is followed by sourness. It has been laid down for about a year, but the taste has settled down and is very nice. The avocado/daikon/tomato salad is tart, which complements the sweetness of the sake and gives it a refreshing aftertaste. Yum! The main dish was freshly sliced yellowtail, which I received as a gift from my hometown. It was a bliss to eat it with yuzu peel and salt, and drink sake. Enjoying the sweetness of sake, the acidity refreshes the fat. It is a perfect match. It keeps its deliciousness without losing to habitual ingredients like kakuteki natto. It was a wonderful encounter.
