The first sip is a sharp one. A little bit of freshness. A bit of freshness, and the taste of aged trout spreads in the mouth. The sweetness and bitterness are in conflict with each other. One thing to say about this wine, though it's in my favorite direction, is that it's a little messy. Even if the flavor is dominant, the popular sake has a balance within it.
The Toyo Nishiki is a refreshing sake, and the No.9 yeast is a bit flamboyant, but the finish is even more dense.
