This one, my favorite!
This sake is made from a blend of 23 out of 36 varieties of rice grown in Shiga Prefecture. They said their goal is to one day make a sake with all 36 varieties.
I had never heard of this sake, but it sounded interesting, so I ordered it.
The first sip was sweet and fruity. I drank it at a sushi restaurant, but I think I prefer it with fried food rather than sushi.
As I continue to drink it, the fruity flavor is like cacao beans! It's a wonder that it's cacao that escapes into the nose, even though it's so light!
Perhaps it is because it is a blend of various types of rice, but it was a very enjoyable sake with a variety of impressions.
