I bought CHIEBIJIN at Horiichi, which I was curious about. The label on the bottle reads "CHIEBIJIN" in Roman characters, just like a wine. 🍷.
Brewed with white wine yeast with water and rice from Kinezuki, it is a perfect blend of wine and sake, with a low acidity that blends well with the umami of the sake.
I had it with smoked oysters and it went very well with them. I also had it today with chicken liver stew from Seven, which was also great. 😋😋😋
