SAMURAIZ
Comparison of different yeasts. We opened a bottle of the No. 7 yeast version of Isshuikusuisei as we did the day before yesterday.
It has a strong pleasant sound. When you put it in your mouth, you can feel a strong gassy sensation. It has a slightly sweet muscat flavor and a gorgeous aroma, followed by acidity and umami.
The slightly sweet and sharp sake would go well with a side dish that has a delicious oil flavor, and the thick fried tofu we prepared was the perfect match.
Comparison of Shinmasa 6 yeast and Isshaku Suisei 7 yeast.
I think I prefer the Ichibakusuisei No. 7 yeast version, although the level of the entrée is also a factor.
