Junmai Ginjo sake with a 55% rice polishing ratio
According to my research, this sake brewery was established in Higashikawa-cho, Kamikawa-gun, Hokkaido as a "public-private" sake brewery, which is rare in Japan. A long-awaited sake brewery has been established in Higashikawa, and I want to make my first sake with Higashikawa-grown rice! A group of like-minded volunteers from JA Higashikawa took on the challenge of growing sake rice in the name of "Higashikawa, the rice-producing region. Two types of sake rice, "Comet" and "Kitashizuku", were made and brewed just for Sanzen櫻.
When poured into a glass, it has a moderate ginjo aroma that is not strong. The first taste is mellow and well-balanced, with umami, sweetness, bitterness, and acidity. In the aftertaste, the sourness and bitterness are assertive. The taste seems to become deeper as it reaches room temperature.
How much I like it (self evaluation)
