This year, I wanted to drink Shinsei well, but I didn't have enough time to do so, and now that July is almost over, I've finally started the first Shinsei drinking comparison! This time it's the classic Ecru! I recommend 2 or 3 years of aging, so I'll have a 2020. I drank a bottle of 2020 Ecru two years ago, but the aroma, which is closer to melon than banana, is still the same, and it doesn't seem to have aged at all! But I think it has aged well, the green grassy aroma has disappeared and the sweetness has become stronger. There is still a little carbonation in the mouth. It's a new style of sake, isn't it? The taste is a good balance of melon-like sweetness and soft acidity, and is both refreshing and gentle. The slight honey-like flavor also goes well with the nuances of the wooden vat, adding complexity to the taste and keeping it from getting boring! I'm glad it stayed delicious as it was, since I just stuck it in the remacombe at random.
